There is nothing easier and more satisfying than a fresh, colourful salad bowl, filled with my all my faves...

In my salad

fresh tomotoes, feta, bed of greens, banana peppers, cucumbers red onions.

My dressing has apple cider vinegar which I love,  extra virgin olive oil, thyme and rosemary salt and pepper. Mix the dressing in a bowl, toss the greens, slice the onions stir well and pour over your salad and you are good to go!!! enjoy!!!

simple & easy is best

The days are too busy with homeschool and work at home to waste time making elaborate lunches. When I need a quick, healthy lunch and I have a little bit of time. I grab some pre-washed greens, whatever veggies i have in the fridge, a can of tuna, some sauerkraut, like cucumber, cherry tomatoes and whip together my easy Homemade White Balsamic Dressing drizzle it on my salad, sprinkle with Salt & Pepper and done! 

 

CHIA PUDDING

 2 cups plain coconut yoghurt (store bought)
 1 cup unsweetened coconut milk
 1/4 cup maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup chia seeds 

Whisk together and refrigerate 5 hours before serving or better yet overnight. If you want you can divided into separate jars for the week. That's what I do. 😊

Ingredients:
1 box barilla bowtie pasta

red and orange sweet peppers

parsely, blanched asparagus, cucumbers

Extra Virgin Olive Oil, salt & pepper, sprinkle of garlic powder & turmeric, dash of lemon and white balsamic vinegar
 Boil Pasta

slice veggies

cool pasta

mix dressing together, pour over pasta and veggies, mix together

Sit back, and enjoy!!!!

Green Salad

I am not a huge fan of the traditional Green Salad, I mean I enjoy it but don't go nuts for ie. I love this green salad. Its super refreshing, you feel happy and satisfied and its super easy to make in under 5 mins!!!! Because who has any more time to whip up a healthy meal right? Fresh and Simple
