I turned 16!!!! Well not exactly....

Guess what I turned 16 last night! Just kidding 16 years ago my now husband, then boyfriend George drove me to the hospital bc he didn’t take my “I’ll be fine” at face value. If it wasn’t for him I may have ended up being too late. 

My “I’ll be fine” ended up meaning heart surgery on 11/15/2004 bc I needed a mitral valve repair. It was totally random there was no medical reason for me to have endocarditis or heart surgery at 25 years old. 

This ended up shaping who I am & who we are as a couple. My heart surgery shaped our views on life & how we live our lives every day since. The whole “life is short” thing we got the lesson super early. 😉

While heart surgery is the scariest thing I’ve ever had to do (and don’t want to do ever again), it breathed life into my passion for wellness & helping others avoid chronic disease. 

When I speak of health & wellness on here it comes ironically directly from my heart ❤️. There is nothing fake or pretend about it, when you’ve experienced feeling unwell & scared good health is everything to you. Last night was the anniversary of my surgery we call it my “second bday” and we celebrate it each year. When I came out of the ICU my nurse told me she hopes that my next hospital stay will be to deliver my first child. And that’s exactly what happened twice over 🙏❤️. 

To say I’m grateful for my health & my family is an understatement, I’m SUPER grateful & I’m SUPER passionate about helping others stay healthy.

Nothing says SUNDAY morning like pancakes….stack me baby!!!!!

RECIPE

1 egg

1 cup of milk

1 cup Bob’s Redmill gluten free flour

2 teaspoons of baking powder

3 tbsps of olive oil

pinch of salt

dash of cinnamon

3 tbsp of brown sugar

1 tsps of vanilla extract

add all the wet ingredients together, mix it all up, in a seperate larger bowl add all the dry ingredients and mix them together. Mix the wet ingredients into the dry flour mix only until the mixture is combined, careful not to over stir. Heat up a pan or skillet on high, lower to medium add some olive oil, two tablespoons of pancake batter and you are on your way to a delish breakfast!!!!
